Description
Yukgaejang is a spicy Korean beef and scallion soup. It features tender beef, scallions, and a rich broth.
Ingredients

- 1 lb beef brisket
- 6 cups water
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 3 tbsp gochugaru (Korean chili flakes)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cups scallions, chopped
- 1 cup bean sprouts
- Salt and pepper to taste
Instructions
- In a pot, combine beef brisket and water. Boil for 30 minutes.
- Add onion, garlic, and ginger. Cook for another 30 minutes.
- Remove beef, shred it, and return to the pot.
- Add gochugaru, soy sauce, and sesame oil. Stir well.
- Add scallions and bean sprouts. Simmer for 10 minutes.
- Season with salt and pepper to taste.
Notes
- Adjust spice level by varying gochugaru.
- Serve hot with rice.
- Can be stored in the refrigerator for up to 3 days.
