Description

Yukgaejang is a spicy Korean beef and scallion soup. It features tender beef, scallions, and a rich broth.


Ingredients

  • 1 lb beef brisket
  • 6 cups water
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 tbsp gochugaru (Korean chili flakes)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cups scallions, chopped
  • 1 cup bean sprouts
  • Salt and pepper to taste

Instructions

  1. In a pot, combine beef brisket and water. Boil for 30 minutes.
  2. Add onion, garlic, and ginger. Cook for another 30 minutes.
  3. Remove beef, shred it, and return to the pot.
  4. Add gochugaru, soy sauce, and sesame oil. Stir well.
  5. Add scallions and bean sprouts. Simmer for 10 minutes.
  6. Season with salt and pepper to taste.

Notes

  • Adjust spice level by varying gochugaru.
  • Serve hot with rice.
  • Can be stored in the refrigerator for up to 3 days.
