A rich and creamy soup made with peanuts and vegetables.
Ingredients

- 1 cup peanut butter
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can diced tomatoes
- 1 teaspoon cayenne pepper
- Salt to taste
- 2 cups spinach
Instructions
- In a pot, sauté onion, garlic, and ginger until fragrant.
- Add carrots and bell pepper; cook for a few minutes.
- Stir in diced tomatoes and cayenne pepper.
- Add broth and bring to a boil.
- Reduce heat and stir in peanut butter until smooth.
- Add spinach and simmer for 10 minutes.
- Season with salt to taste and serve hot.
Notes
- Serve with rice or bread.
- Adjust spice level to your preference.
- Store leftovers in the fridge for up to 3 days.
