Ingredients

  • 1 cup peanut butter
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can diced tomatoes
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • 2 cups spinach

Instructions

  1. In a pot, sauté onion, garlic, and ginger until fragrant.
  2. Add carrots and bell pepper; cook for a few minutes.
  3. Stir in diced tomatoes and cayenne pepper.
  4. Add broth and bring to a boil.
  5. Reduce heat and stir in peanut butter until smooth.
  6. Add spinach and simmer for 10 minutes.
  7. Season with salt to taste and serve hot.
