Description

Trini Doubles are a popular street food from Trinidad and Tobago made with curried chickpeas served on soft bara bread.


Ingredients

  • 1 cup chickpeas, soaked overnight
  • 1 tablespoon curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 2 cups water
  • Salt to taste
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon sugar
  • 1/2 cup warm water
  • Oil for frying

Instructions

  1. Drain and rinse soaked chickpeas.
  2. In a pot, heat oil and sauté onion and garlic until soft.
  3. Add curry powder, cumin, and chickpeas; stir for a few minutes.
  4. Add water, cover, and simmer until chickpeas are tender.
  5. In a bowl, mix flour, baking powder, turmeric, sugar, and salt.
  6. Add warm water gradually to form a dough.
  7. Knead the dough and let it rest for 30 minutes.
  8. Divide the dough into balls and roll them out into flat discs.
  9. Heat oil for frying and fry the bara until golden brown.
  10. Assemble each double by placing chickpeas between two pieces of bara.

Notes

  • Serve with pepper sauce for extra flavor.
  • Adjust the spice level to your preference.
  • Make sure the dough is soft for best results.
