Description
A hearty and flavorful Taiwanese beef noodle soup.
Ingredients

- 1 lb beef shank
- 4 cups beef broth
- 2 cups water
- 2 tbsp soy sauce
- 1 tbsp rice wine
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 scallions, chopped
- 1 star anise
- 4 oz wheat noodles
- Salt to taste
- Black pepper to taste
Instructions
- In a pot, combine beef shank, beef broth, water, soy sauce, rice wine, garlic, ginger, scallions, and star anise.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove beef, let cool, then slice into pieces.
- Strain the broth and return to pot, adjusting salt and pepper as needed.
- Cook noodles according to package instructions.
- Serve noodles in bowls, topped with sliced beef and hot broth.
- Garnish with additional scallions if desired.

- Use fresh noodles for better texture.
- Adjust seasoning to your taste.
- Can store broth for up to 3 days in fridge.
