Ingredients

  • 4 cups beef broth
  • 2 cups water
  • 2 tbsp soy sauce
  • 1 tbsp rice wine
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 scallions, chopped
  • 1 star anise
  • 4 oz wheat noodles
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a pot, combine beef shank, beef broth, water, soy sauce, rice wine, garlic, ginger, scallions, and star anise.
  2. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  3. Remove beef, let cool, then slice into pieces.
  4. Strain the broth and return to pot, adjusting salt and pepper as needed.
  5. Cook noodles according to package instructions.
  6. Serve noodles in bowls, topped with sliced beef and hot broth.
  7. Garnish with additional scallions if desired.
