Instructions

  1. Cook the beef. In a large skillet over medium heat, add olive oil. Once hot, toss in the ground beef, breaking it apart with a spoon. Cook until browned and no longer pink, about 5–7 minutes.
  2. Season. Drain excess grease, then add diced onion and minced garlic. Sauté until the onion is translucent, about 3 minutes. Stir in chili powder, cumin, smoked paprika, and cayenne pepper. Cook for another minute to bloom the spices.
  3. Finish the base. Pour in the salsa, reduce heat to low, and let the mixture simmer for 5 minutes so the flavors meld. Remove from heat and let it cool to room temperature.
  4. Layer the dip. In a shallow, wide dish (about 10×8 inches), spread a thin layer of the cooled beef mixture. Sprinkle half of the cheddar and half of the Monterey‑Jack cheese over it. Add a layer of sour cream, then a layer of guacamole. Repeat the layers once more, finishing with a generous topping of the remaining cheeses.
  5. Chill. Cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight. The dip will firm up, making it easier to scoop.
