Ingredients

- 2 lbs beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 cup dried apricots, halved
- 1/2 cup almonds, toasted
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a tagine or heavy pot over medium heat.
- Add onions and sauté until soft.
- Stir in garlic and spices, cooking for 1-2 minutes.
- Add beef and brown on all sides.
- Pour in tomatoes and beef broth, and bring to a simmer.
- Add apricots and season with salt and pepper.
- Cover and cook on low heat for 2-3 hours, until beef is tender.
- Stir in toasted almonds before serving.
- Garnish with fresh cilantro.
Notes
- Serve with couscous or rice.
- This dish can be made a day ahead for better flavor.
- Adjust sweetness by adding more or fewer apricots.
