  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 cup dried apricots, halved
  • 1/2 cup almonds, toasted
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a tagine or heavy pot over medium heat.
  2. Add onions and sauté until soft.
  3. Stir in garlic and spices, cooking for 1-2 minutes.
  4. Add beef and brown on all sides.
  5. Pour in tomatoes and beef broth, and bring to a simmer.
  6. Add apricots and season with salt and pepper.
  7. Cover and cook on low heat for 2-3 hours, until beef is tender.
  8. Stir in toasted almonds before serving.
  9. Garnish with fresh cilantro.
