Ingredients

  • 1 cup chopped fresh basil leaves
  • 1 cup low‑fat Greek yogurt
  • 1 cup vegetable broth
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • Optional garnish: chopped cilantro, a drizzle of olive oil, or a swirl of yogurt

Instructions

  1. Prep the veggies. Dice the cucumber, tomatoes, and both bell peppers into bite‑size pieces. Roughly chop the basil.
  2. Layer in the crockpot. Start with the diced cucumber at the bottom, then add tomatoes, bell peppers, and basil. Sprinkle the salt, pepper, and oregano evenly over the vegetables.
  3. Add liquids. Pour in the vegetable broth, lemon juice, and olive oil. Stir gently to combine.
  4. Cook. Cover and set the crockpot to low for 4–5 hours or high for 2–3 hours. The soup should be fragrant and the vegetables tender.
  5. Blend. Once cooked, use an immersion blender to puree the mixture until smooth. If you prefer a chunkier texture, blend only half and leave the rest as is.
  6. Finish with yogurt. Stir in the Greek yogurt until fully incorporated. Taste and adjust seasoning if needed.
  7. Chill. Transfer the soup to a container and refrigerate for at least 2 hours, or serve immediately over ice cubes for a truly refreshing experience.
  8. Serve. Ladle into bowls, garnish with cilantro, a drizzle of olive oil, or a swirl of yogurt, and enjoy!
