Description

Whip up a quick summer ground beef skillet for dinner—light, zesty, and perfect for warm evenings. Try it tonight!

Ingredients

Scale
  • 1 pound lean ground beef (80% lean)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 1 tablespoon fresh cilantro, chopped (plus extra for garnish)
  • Juice of 1 lime
  • 1 cup shredded cheddar cheese (optional)
  • Fresh avocado slices, for serving (optional)
  • Cooked rice or warm tortillas, for serving

Instructions

  1. Heat the pan. Place a large skillet over medium‑high heat and add the olive oil. Let it shimmer for a few seconds.
  2. Sear the beef. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5 minutes. Drain excess fat if needed.
  3. Cook the aromatics. Push the beef to one side, then add the diced onion and bell peppers to the pan. Sauté until the onions are translucent and the peppers soften, about 4 minutes.
  4. Add garlic. Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Introduce the veggies. Mix in the cherry tomatoes and corn. Cook for another 2 minutes, letting the tomatoes soften slightly.
  6. Season. Sprinkle cumin, smoked paprika, chili powder, cayenne (if using), salt, and pepper over the mixture. Stir well to coat everything evenly.
  7. Finish with lime. Drizzle the lime juice over the skillet, then stir in chopped cilantro. Taste and adjust seasoning if needed.
  8. Optional cheese. Sprinkle shredded cheddar over the top, cover the skillet for 1 minute, or until the cheese melts.
  9. Serve. Ladle the skillet onto bowls or plates. Garnish with extra cilantro, avocado slices, and a squeeze of lime. Pair with rice or warm tortillas.

Notes

  • Use a cast‑iron or heavy‑bottomed skillet to keep heat even and prevent sticking.
  • For a smokier flavor, toast the cumin and paprika in the pan for 30 seconds before adding the beef.
  • If you prefer a milder dish, reduce or omit the cayenne pepper.
  • Keep the lime wedges on the side so you can adjust the acidity to your taste.
  • For a vegan version, swap the ground beef for crumbled tempeh or lentils.
