Ingredients

- 2 cups basmati rice
- 1 lb chicken thighs, boneless and skinless
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Salt to taste
- Black pepper to taste
- 4 cups chicken broth
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Season chicken with cumin, paprika, turmeric, salt, and pepper.
- Add chicken to the pot and cook until browned.
- Stir in the rice and chicken broth.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 15-20 minutes until rice is tender.
- Fluff the rice with a fork and let it sit for 5 minutes.
- Serve hot, garnished with fresh cilantro.
