Description
Sticky Toffee Pudding is a moist sponge cake made with dates and covered in a rich toffee sauce.
Ingredients

- 200g pitted dates
- 250ml boiling water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 200g all-purpose flour
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat your oven to 180°C (350°F).
- Chop dates and mix with boiling water and baking soda. Let it cool.
- In a bowl, cream butter and brown sugar until light.
- Add eggs one at a time, mixing well.
- Stir in the date mixture.
- In another bowl, combine flour and baking powder.
- Gradually add the flour mixture to the wet ingredients.
- Pour mixture into a greased baking dish.
- Bake for 30-35 minutes or until a skewer comes out clean.
- While baking, prepare the toffee sauce.
- Serve warm with toffee sauce poured over the top.
Notes
- Can be served with vanilla ice cream.
- Store leftovers in an airtight container.
- For extra flavor, add a pinch of salt to the toffee sauce.
