Description

Sticky Toffee Pudding is a moist sponge cake made with dates and covered in a rich toffee sauce.


Ingredients

  • 200g pitted dates
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Chop dates and mix with boiling water and baking soda. Let it cool.
  3. In a bowl, cream butter and brown sugar until light.
  4. Add eggs one at a time, mixing well.
  5. Stir in the date mixture.
  6. In another bowl, combine flour and baking powder.
  7. Gradually add the flour mixture to the wet ingredients.
  8. Pour mixture into a greased baking dish.
  9. Bake for 30-35 minutes or until a skewer comes out clean.
  10. While baking, prepare the toffee sauce.
  11. Serve warm with toffee sauce poured over the top.

Notes

  • Can be served with vanilla ice cream.
  • Store leftovers in an airtight container.
  • For extra flavor, add a pinch of salt to the toffee sauce.
