Ingredients

  • 4 cups water

Instructions

  1. Rinse lentils under cold water.
  2. Heat oil in a pot over medium heat.
  3. Add cumin seeds and sauté until fragrant.
  4. Add onion, garlic, and ginger. Cook until onion is translucent.
  5. Add tomatoes and turmeric. Cook until tomatoes soften.
  6. Add lentils and water. Bring to a boil.
  7. Reduce heat and simmer until lentils are tender.
  8. Add spinach and cook until wilted.
  9. Season with salt and serve hot.
