Description
Soup Joumou is a traditional Haitian squash soup served on New Year’s Day.
Ingredients
Scale
- 2 pounds of butternut squash
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 1 bell pepper, chopped
- 2 stalks of celery, diced
- 6 cups of vegetable broth
- 1 teaspoon of thyme
- Salt and pepper to taste
- Juice of 1 lime
- Fresh parsley for garnish
Instructions
- Peel and cube the butternut squash.
- In a large pot, sauté onion, garlic, carrots, bell pepper, and celery until softened.
- Add the squash, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Puree the soup until smooth.
- Stir in lime juice and adjust seasoning.
- Garnish with fresh parsley before serving.
Notes
- Serve hot for best flavor.
- This soup can be frozen for later use.
- Adjust the thickness by adding more broth if needed.
