Ingredients

  • 4 large eggs
  • 1 cup diced tomatoes
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 whole wheat wraps
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Heat a skillet over medium heat and add onion and bell peppers.
  2. Sauté until soft, about 5 minutes.
  3. Add garlic, diced tomatoes, paprika, cumin, salt, and pepper.
  4. Simmer for 10 minutes until thickened.
  5. Create four wells in the mixture and crack an egg into each well.
  6. Cover and cook until eggs are set to your liking.
  7. Remove from heat and sprinkle with feta cheese.
  8. Place the shakshuka mixture in the center of each wrap and roll tightly.
  9. Slice in half and serve warm.

Notes

  • Feel free to add other vegetables like spinach or zucchini.
  • You can substitute feta with any cheese of your choice.
