Ingredients

  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 4 eggs
  • 100 grams feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté until softened.
  3. Stir in garlic, cumin, and paprika, cook for 1 minute.
  4. Add diced tomatoes, simmer for 10 minutes.
  5. Season with salt and pepper.
  6. Make four wells in the mixture and crack an egg into each well.
  7. Cover the pan and cook until eggs are set.
  8. Toast the bread slices.
  9. Serve the shakshouka over the toast and sprinkle with feta and parsley.
