Description
A delicious twist on traditional shakshouka, served on toast with feta and fried eggs.
Ingredients

- 4 slices of bread
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can (14 oz) diced tomatoes
- 4 eggs
- 100 grams feta cheese, crumbled
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté until softened.
- Stir in garlic, cumin, and paprika, cook for 1 minute.
- Add diced tomatoes, simmer for 10 minutes.
- Season with salt and pepper.
- Make four wells in the mixture and crack an egg into each well.
- Cover the pan and cook until eggs are set.
- Toast the bread slices.
- Serve the shakshouka over the toast and sprinkle with feta and parsley.

- Use any bread of your choice.
- Adjust spices to your taste.
- Can add spinach for extra nutrition.
