Description
This rice pudding brûlée features a creamy base with a caramelized sugar top.
Ingredients

- 1 cup Arborio rice
- 4 cups whole milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 egg yolks
- 1/4 cup brown sugar (for topping)
Instructions
- In a saucepan, combine rice and milk. Cook over medium heat, stirring frequently.
- Add sugar, vanilla, and salt. Continue cooking until rice is tender and mixture thickens.
- Remove from heat and let cool slightly.
- In a bowl, whisk egg yolks. Slowly add a small amount of the rice mixture to temper the yolks.
- Stir the tempered yolks back into the rice mixture.
- Pour the mixture into serving dishes and chill in the refrigerator.
- Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize the sugar until golden brown.

- Ensure the rice is fully cooked before adding egg yolks.
- Use a torch carefully to avoid burns.
- For a richer flavor, you can add cinnamon or nutmeg.
