Instructions

  1. In a saucepan, combine rice and milk. Cook over medium heat, stirring frequently.
  2. Add sugar, vanilla, and salt. Continue cooking until rice is tender and mixture thickens.
  3. Remove from heat and let cool slightly.
  4. In a bowl, whisk egg yolks. Slowly add a small amount of the rice mixture to temper the yolks.
  5. Stir the tempered yolks back into the rice mixture.
  6. Pour the mixture into serving dishes and chill in the refrigerator.
  7. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
