- Crumb the cake. Once cooled, break the cake into pieces and place them in a large mixing bowl. Using your hands, mash the cake until it resembles fine crumbs.
- Make the binding glaze. In a microwave‑safe bowl, combine the white chocolate chips and heavy cream. Microwave in 30‑second bursts, stirring between each, until smooth and glossy.
- Combine. Pour the melted white chocolate over the cake crumbs. Mix quickly with a spatula until the mixture holds together when pressed. If it feels dry, add a teaspoon more cream.
- Form the pops. Scoop about 1‑ tablespoon of the mixture and roll it between your palms into a smooth ball. Place each ball on a sheet of wax paper. Repeat until all mixture is used.
- Chill. Freeze the cake balls for 20‑30 minutes, or until firm enough to insert sticks.
- Insert sticks. Dip the tip of each lollipop stick in melted white chocolate (this acts as glue) and press it into the center of a cake ball. Hold for a few seconds until set.
- Prepare the coating. In a clean microwave‑safe bowl, melt the semi‑sweet chocolate chips with coconut oil, stirring every 20 seconds until smooth. The coconut oil gives a glossy finish and helps the coating stay firm in the heat.
- Dip the pops. Hold a cake pop by the stick and dip it into the melted chocolate, turning gently to coat all sides. Tap the stick against the bowl to let excess drip off.
- Decorate. While the coating is still wet, sprinkle edible glitter or drizzle a few drops of food‑grade spray paint for a splash of pool‑blue, teal, or sunny yellow. You can also swirl two colors together for a marbled effect.
- Set. Place the finished pops back onto the wax paper. Let them sit at room temperature for 10‑15 minutes, or refrigerate for 5 minutes, until the chocolate hardens.
