Description

Ingredients

  • Choux pastry: 1 cup water, 1/2 cup butter, 1 cup all-purpose flour, 4 large eggs
  • Pistachio cream: 1 cup pistachios, 1/2 cup sugar, 1/2 cup heavy cream, 1 teaspoon vanilla extract
  • Raspberry glaze: 1 cup raspberries, 1/2 cup powdered sugar, 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine water and butter. Bring to a boil.
  3. Add flour and stir until the mixture pulls away from the sides.
  4. Remove from heat and let cool slightly. Beat in eggs one at a time.
  5. Pipe the choux pastry onto a baking sheet.
  6. Bake for 25 minutes or until golden brown.
  7. For the pistachio cream, blend pistachios, sugar, heavy cream, and vanilla until smooth.
  8. For the raspberry glaze, blend raspberries, powdered sugar, and lemon juice until smooth.
  9. Fill cooled éclairs with pistachio cream.
  10. Top with raspberry glaze before serving.
