Description

This healthy overnight French toast casserole uses whole grain bread and natural maple syrup. You prepare it the night before for an easy morning meal.


Ingredients

  • 1 loaf whole wheat bread cubed
  • 6 large eggs
  • 2 cups unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup fresh blueberries
  • 1/4 cup chopped walnuts

Instructions

  1. Grease a 9 by 13 inch baking dish.
  2. Place bread cubes into the dish.
  3. Whisk eggs milk syrup vanilla cinnamon and nutmeg in a large bowl.
  4. Pour liquid over the bread.
  5. Cover the dish and refrigerate for 8 hours.
  6. Preheat oven to 350 degrees Fahrenheit.
  7. Bake for 45 minutes until the top turns golden brown.
