Description
This healthy overnight French toast casserole uses whole grain bread and natural maple syrup. You prepare it the night before for an easy morning meal.

- 1 loaf whole wheat bread cubed
- 6 large eggs
- 2 cups unsweetened almond milk
- 1/4 cup maple syrup
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup fresh blueberries
- 1/4 cup chopped walnuts
Instructions
- Grease a 9 by 13 inch baking dish.
- Place bread cubes into the dish.
- Whisk eggs milk syrup vanilla cinnamon and nutmeg in a large bowl.
- Pour liquid over the bread.
- Cover the dish and refrigerate for 8 hours.
- Preheat oven to 350 degrees Fahrenheit.
- Bake for 45 minutes until the top turns golden brown.
Notes
- Use stale bread for a firmer texture.
- Swap walnuts for pecans if you prefer.
- Store leftovers in the refrigerator for up to 3 days.
