Ingredients

  • 4 chicken thighs, skinless
  • 2 tablespoons jerk seasoning
  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, rinsed
  • 1 can (15 oz) coconut milk
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bell pepper, diced
  • Salt to taste

Instructions

  1. Season chicken thighs with jerk seasoning.
  2. In a large pot, heat oil over medium heat.
  3. Add chicken and brown on all sides.
  4. Remove chicken and set aside.
  5. Add onion, garlic, and bell pepper to the pot. Cook until soft.
  6. Add rice, black beans, coconut milk, and chicken broth. Stir to combine.
  7. Return chicken to the pot.
  8. Add thyme and salt. Bring to a boil.
  9. Reduce heat, cover, and simmer for 25-30 minutes until rice is cooked.
  10. Fluff rice and serve hot.

Notes

  • Adjust jerk seasoning to taste.
  • Use bone-in chicken for more flavor.
  • Let leftovers cool before refrigerating.
