Description

Ingredients

  • 1 cup chicken, diced
  • 1/2 onion, chopped
  • 1/2 cup peas and carrots
  • 2 tablespoons ketchup
  • 4 eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 cup demiglace sauce

Instructions

  1. Heat oil in a pan over medium heat.
  2. Sauté onions until translucent.
  3. Add chicken and cook until browned.
  4. Stir in peas and carrots, cook for 2 minutes.
  5. Add cooked rice and ketchup, mix well.
  6. Season with salt and pepper, then set aside.
  7. In a bowl, whisk eggs and milk together.
  8. Pour half the egg mixture into a pan, cook until slightly set.
  9. Add half the rice mixture on one side of the omelette.
  10. Fold the omelette over the rice and slide onto a plate.
  11. Repeat with remaining egg and rice mixture.
  12. Top with demiglace sauce before serving.
