Description
Omurice is a Japanese dish consisting of fried rice wrapped in an omelette, topped with a rich demiglace sauce.
Ingredients

- 2 cups cooked rice
- 1 cup chicken, diced
- 1/2 onion, chopped
- 1/2 cup peas and carrots
- 2 tablespoons ketchup
- 4 eggs
- 2 tablespoons milk
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 cup demiglace sauce
Instructions
- Heat oil in a pan over medium heat.
- Sauté onions until translucent.
- Add chicken and cook until browned.
- Stir in peas and carrots, cook for 2 minutes.
- Add cooked rice and ketchup, mix well.
- Season with salt and pepper, then set aside.
- In a bowl, whisk eggs and milk together.
- Pour half the egg mixture into a pan, cook until slightly set.
- Add half the rice mixture on one side of the omelette.
- Fold the omelette over the rice and slide onto a plate.
- Repeat with remaining egg and rice mixture.
- Top with demiglace sauce before serving.
Notes
- Use day-old rice for better texture.
