Description
Maqluba is a traditional Middle Eastern dish made with rice, eggplant, and lamb, served upside down.
Ingredients

- 2 cups rice
- 1 lb lamb, cut into pieces
- 1 large eggplant, sliced
- 1 onion, chopped
- 4 cups water
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1/4 cup olive oil
- 1/4 cup pine nuts
Instructions
- Soak the rice in water for 30 minutes.
- Heat olive oil in a pot and sauté onions until golden.
- Add lamb and cook until browned.
- Layer eggplant slices on top of the lamb.
- Drain the rice and add it over the eggplant.
- Pour water over the rice and season with salt, pepper, and cumin.
- Bring to a boil, then reduce heat and cover.
- Cook for 30-40 minutes until rice is done.
- Let it rest for 10 minutes before flipping it onto a serving platter.
- Garnish with pine nuts.
Notes
- Use basmati rice for better flavor.
- Adjust spices to your taste.
- Serve with yogurt for added richness.
