Description
Mansaf is a traditional Jordanian dish made with lamb and yogurt.
Ingredients

- 2 lbs lamb, cut into pieces
- 1 cup plain yogurt
- 2 cups rice
- 4 cups water
- 1 large onion, chopped
- 2 tablespoons ghee or butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon allspice
- 1/2 cup pine nuts, toasted
- Fresh parsley for garnish
Instructions
- In a large pot, heat ghee over medium heat.
- Add chopped onion and sauté until translucent.
- Add lamb pieces and brown on all sides.
- Season with salt, black pepper, and allspice.
- Add water and bring to a boil.
- Reduce heat and simmer for 1.5 hours until lamb is tender.
- Remove lamb and strain the broth.
- Return broth to pot and add rice.
- Cook rice according to package instructions.
- In a bowl, mix yogurt with some broth to temper it.
- Add yogurt mixture to the pot with the lamb and heat gently.
- Serve lamb over rice and drizzle with yogurt sauce.
- Garnish with toasted pine nuts and fresh parsley.
Notes
- Adjust seasoning to taste.
- Use lamb shoulder for more flavor.
- Serve with flatbread for a complete meal.
