Description

Mansaf is a traditional Jordanian dish made with lamb and yogurt.


Ingredients

  • 2 lbs lamb, cut into pieces
  • 1 cup plain yogurt
  • 2 cups rice
  • 4 cups water
  • 1 large onion, chopped
  • 2 tablespoons ghee or butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon allspice
  • 1/2 cup pine nuts, toasted
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat ghee over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add lamb pieces and brown on all sides.
  4. Season with salt, black pepper, and allspice.
  5. Add water and bring to a boil.
  6. Reduce heat and simmer for 1.5 hours until lamb is tender.
  7. Remove lamb and strain the broth.
  8. Return broth to pot and add rice.
  9. Cook rice according to package instructions.
  10. In a bowl, mix yogurt with some broth to temper it.
  11. Add yogurt mixture to the pot with the lamb and heat gently.
  12. Serve lamb over rice and drizzle with yogurt sauce.
  13. Garnish with toasted pine nuts and fresh parsley.

Notes

  • Adjust seasoning to taste.
  • Use lamb shoulder for more flavor.
  • Serve with flatbread for a complete meal.
