A fresh and healthy Lebanese Tabbouleh Salad made with parsley, tomatoes, and bulgur.
Ingredients

- 1 cup bulgur wheat
- 2 cups boiling water
- 1 bunch parsley, finely chopped
- 1/2 cup mint leaves, finely chopped
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup green onions, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt to taste
Instructions
- Rinse bulgur wheat under cold water.
- Pour boiling water over bulgur in a bowl.
- Cover and let it sit for 30 minutes.
- Fluff bulgur with a fork.
- Add parsley, mint, tomatoes, cucumber, and green onions.
- Drizzle olive oil and lemon juice over the salad.
- Add salt and mix well.
- Chill before serving.
