- 500g beef shank
- 200g wheat flour
- 1 tsp salt
- 1/2 tsp baking soda
- 2 cups water
- 4 cups beef broth
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 1 tsp chili oil
- 2 green onions, chopped
Instructions
- Mix flour, salt, and baking soda in a bowl.
- Add water gradually and knead into a dough.
- Let the dough rest for 30 minutes.
- Boil the beef shank until tender, about 1.5 hours.
- Remove beef and slice thinly.
- Roll out the dough and stretch into thin noodles.
- Cook the noodles in boiling water for 3-5 minutes.
- In a bowl, add beef broth, noodles, sliced beef, garlic, ginger, and chili oil.
- Garnish with green onions and serve hot.
