Description
A traditional sweet bun spiced with cinnamon and filled with currants or raisins, marked with a cross on top.
Ingredients

- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 packet instant yeast
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup milk, warmed
- 1/4 cup butter, melted
- 2 large eggs
- 1 cup mixed dried fruit (currants, raisins)
- 1/2 cup candied orange peel
- For the cross: 1/2 cup all-purpose flour, water
- For the glaze: 1/4 cup apricot jam, warmed
Instructions
- In a large bowl, mix flour, sugar, yeast, salt, cinnamon, and nutmeg.
- In another bowl, combine warm milk, melted butter, and eggs.
- Gradually add the wet ingredients to the dry ingredients.
- Knead the dough for about 10 minutes until smooth.
- Add dried fruit and candied peel, kneading until well incorporated.
- Place dough in a greased bowl, cover, and let rise for 1 hour.
- Punch down the dough and divide it into 12 equal pieces.
- Shape each piece into a ball and place on a baking sheet.
- Cover and let rise for another 30 minutes.
- Preheat the oven to 375°F (190°C).
- Mix flour and water to make a paste for the cross. Pipe a cross on each bun.
- Bake for 20-25 minutes until golden brown.
- Brush the warm buns with apricot glaze.
Notes
- Use fresh yeast for the best results.
- Store buns in an airtight container.
