Instructions

  1. Prep the hibiscus tea. Bring ½ cup water to a boil, add the dried hibiscus flowers, and steep for 5 minutes. Strain and let cool to room temperature. This gives the cake its pink‑orange tint and a gentle floral note.
  2. Preheat and prepare the pan. Set your oven to 350°F (175°C). Grease a 9‑inch round cake pan with butter and line the bottom with parchment paper. This ensures a clean release.
  3. Combine dry ingredients. In a medium bowl whisk together the all‑purpose flour, almond flour, baking powder, and salt. Set aside.
  4. Cream butter and sugar. Using a hand mixer, beat the softened butter and granulated sugar on medium speed until pale and fluffy, about 3‑4 minutes. Scrape down the sides as needed.
