Ingredients

- 2 chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 1 egg
- 2 cups vegetable oil for frying
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 4 cups chicken broth
- 3 tablespoons curry powder
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Flatten the chicken breasts with a meat mallet.
- Season with salt and pepper.
- Dredge chicken in flour, dip in beaten egg, then coat with panko breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry chicken until golden brown and cooked through, about 5 minutes per side.
- Remove from oil and drain on paper towels.
- In another pot, sauté onions until translucent.
- Add carrots and potatoes, cooking for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add curry powder and soy sauce, simmer for 15 minutes.
- Slice chicken and serve over rice with curry sauce.

- Ensure chicken is fully cooked before serving.
- Adjust curry powder for desired spice level.
- Serve with steamed rice.
