Ingredients

  • 2 chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 egg
  • 2 cups vegetable oil for frying
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups chicken broth
  • 3 tablespoons curry powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Flatten the chicken breasts with a meat mallet.
  2. Season with salt and pepper.
  3. Dredge chicken in flour, dip in beaten egg, then coat with panko breadcrumbs.
  4. Heat oil in a frying pan over medium heat.
  5. Fry chicken until golden brown and cooked through, about 5 minutes per side.
  6. Remove from oil and drain on paper towels.
  7. In another pot, sauté onions until translucent.
  8. Add carrots and potatoes, cooking for 5 minutes.
  9. Pour in chicken broth and bring to a boil.
  10. Add curry powder and soy sauce, simmer for 15 minutes.
  11. Slice chicken and serve over rice with curry sauce.
