Ingredients

- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 6 cups beef broth
- 1 cup white wine
- 2 tablespoons flour

- Salt and pepper to taste
- 1 baguette, sliced
- 2 cups Gruyere cheese, shredded
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onions and cook until caramelized, about 30 minutes.
- Stir in flour and cook for 2 minutes.
- Add wine, broth, thyme, salt, and pepper.
- Simmer for 30 minutes.
- Preheat the oven to broil.
- Toast baguette slices until golden brown.
- Serve soup in bowls, top with baguette and cheese.
- Broil until cheese is bubbly.

- Adjust the amount of onions based on your preference.
- You can use vegetable broth for a vegetarian version.
