Description
Classic French onion soup with caramelized onions and melted cheese.
Ingredients

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 8 cups beef broth
- 1/2 cup dry white wine
- 1 teaspoon thyme
- 1 bay leaf
- 8 slices of baguette
- 2 cups grated Gruyère cheese
Instructions
- In a large pot, melt butter and oil over medium heat.
- Add onions, salt, and sugar. Cook until caramelized, about 30 minutes.
- Stir in broth, wine, thyme, and bay leaf. Simmer for 20 minutes.
- Toast baguette slices until golden.
- Serve soup in bowls, top with baguette and cheese.
- Broil until cheese is melted and bubbly.
Notes
- Use low-sodium broth for less salt.
- For vegetarian option, substitute beef broth with vegetable broth.
- Add more cheese for a richer flavor.
