Description
Easy Baba Ghanoush is a creamy eggplant dip with a smoky flavor.
Ingredients

- 2 medium eggplants
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 tablespoons lemon juice
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Poke holes in the eggplants with a fork.
- Place eggplants on a baking sheet and roast for 30-40 minutes until soft.
- Remove eggplants and let them cool.
- Peel the skin off the eggplants and place the flesh in a bowl.
- Add tahini, olive oil, garlic, lemon juice, and salt.
- Blend until smooth.
- Serve with pita bread or vegetables.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- For a smokier flavor, grill the eggplants instead of roasting.
- Adjust garlic and lemon to taste.
