A light and airy cake infused with Earl Grey tea flavor.
Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1/4 cup water
- 2 tablespoons Earl Grey tea leaves
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, steep the tea leaves in hot water for 10 minutes.
- In a separate bowl, whisk egg yolks and sugar until pale.
- Add oil, steeped tea, and vanilla to the yolk mixture.
- In another bowl, mix flour, baking powder, and salt.
- Combine the dry ingredients with the wet mixture.
- In a clean bowl, beat egg whites until stiff peaks form.
- Fold egg whites into the batter gently.
- Pour the batter into an ungreased tube pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool upside down in the pan for 1 hour.
- Remove from the pan and serve.
Notes
- Store in an airtight container.
- Can be served with lemon glaze.
- Perfect for afternoon tea.
