Ingredients

  • 1 cup blackberries
  • 1/4 cup chicken stock
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon butter

Instructions

  1. Score the skin of the duck breasts in a crosshatch pattern.
  2. Season the duck breasts with salt and pepper on both sides.
  3. Place the duck breasts skin-side down in a cold skillet.
  4. Slowly heat the skillet over medium heat. Render the fat until the skin is crispy.
  5. Flip the duck breasts and cook for an additional 4-5 minutes until medium rare.
  6. Remove the duck from the skillet and let it rest.
  7. In the same skillet, add blackberries, chicken stock, honey, and balsamic vinegar.
  8. Simmer the sauce until it thickens slightly.
  9. Finish the sauce with butter, stirring until melted.
  10. Slice the duck and serve with the blackberry sauce.
