Crispy Skin Duck Breast served with a flavorful Blackberry Sauce.
Ingredients

- 2 duck breasts
- Salt to taste
- Black pepper to taste
- 1 cup blackberries
- 1/4 cup chicken stock
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon butter
Instructions
- Score the skin of the duck breasts in a crosshatch pattern.
- Season the duck breasts with salt and pepper on both sides.
- Place the duck breasts skin-side down in a cold skillet.
- Slowly heat the skillet over medium heat. Render the fat until the skin is crispy.
- Flip the duck breasts and cook for an additional 4-5 minutes until medium rare.
- Remove the duck from the skillet and let it rest.
- In the same skillet, add blackberries, chicken stock, honey, and balsamic vinegar.
- Simmer the sauce until it thickens slightly.
- Finish the sauce with butter, stirring until melted.
- Slice the duck and serve with the blackberry sauce.
