Instructions

  1. In a bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
  2. Heat a non-stick skillet over medium heat and add a little butter.
  3. Pour a thin layer of batter into the skillet and cook until edges lift, about 1-2 minutes.
  4. Flip and cook for another minute, then transfer to a plate.
  5. Repeat with remaining batter.
  6. In another bowl, whip heavy cream to soft peaks.
  7. Fold whipped cream into the crème brûlée mixture.
  8. Fill each crepe with the crème brûlée filling.
  9. Sprinkle granulated sugar on top and caramelize with a kitchen torch.
  10. Serve immediately.
