- 4 ears of fresh corn, husks removed
- 3 tablespoons unsalted butter, melted
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley (optional, for garnish)
- 1 tablespoon lemon zest (optional, for brightness)
Instructions
- Preheat the grill. I set my gas grill to medium‑high (about 400°F) and let it heat up for 5 minutes.
- Prepare the corn. Brush each ear lightly with a bit of melted butter to help the seasonings stick.
- Mix the seasoning. In a small bowl, combine the remaining melted butter, Parmesan, garlic powder, smoked paprika, oregano, and black pepper.
- Coat the corn. Using a pastry brush or your hands, spread the parmesan mixture evenly over each ear, making sure every side is covered.
- Grill. Place the corn directly on the grill grates. Close the lid and cook for 10–12 minutes, turning every 3–4 minutes so all sides get a nice char and the cheese melts into a golden crust.
- Finish. When the corn is tender and the cheese is bubbly, remove it from the grill. If you like a little extra zing, sprinkle lemon zest and fresh parsley over the top.
- Serve. Plate immediately while hot. A squeeze of fresh lime or a drizzle of olive oil can add a final touch if you wish.
Notes
- Use fresh corn: the sweeter the corn, the better the final taste.
- Don’t over‑baste: a light coating of butter is enough to keep the corn moist.
- Watch the grill: corn can burn quickly; keep an eye on the char.
- Experiment with herbs: basil or thyme can replace oregano for a different aroma.
