Instructions
- Prep the corn. Pull back the husks just enough to expose the silk, but keep them attached at the base. Remove the silk by hand or with a soft brush. Once clean, fold the husks back over the kernels.
- Season the butter mixture. In a small bowl, whisk together melted butter, olive oil, salt, pepper, and smoked paprika if using. The oil helps the butter coat the kernels evenly without soaking through the husk.
- Brush the corn. Using a silicone basting brush, drizzle the butter mixture over each ear, making sure to get some under the husk edges where the kernels peek through. The husk will trap the steam and the butter will melt into the corn.
- Preheat the grill. Set your gas or charcoal grill to medium‑high heat (about 400‑425°F / 200‑220°C). Let it heat for 10 minutes so the grates are hot but not flaming.
- Grill the corn. Place the seasoned ears directly on the grill grate, husk side down. Close the lid and cook for 15‑20 minutes, turning once halfway through. You’ll know they’re done when the husks are charred and the kernels feel firm yet tender when you press them through a small opening.
- Rest and peel. Remove the corn from the grill and let it rest for 3‑4 minutes. Then, carefully pull the husks back (they’ll be hot!) and discard the silk that may have loosened.
