Ingredients

  • 2 cups apple cider
  • 1 onion, chopped
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste
  • Fresh sage leaves for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the roast with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium heat.
  4. Sear the roast on all sides until browned.
  5. Add onions and garlic, sauté until softened.
  6. Pour in the apple cider and add thyme and carrots.
  7. Cover and transfer to the oven. Cook for 3 hours.
  8. In the last 30 minutes, add diced potatoes to the pot.
  9. Remove the pot from the oven. Let it rest before slicing.
  10. Serve with crispy sage leaves on top.
