Description

Chorba Frik is a traditional Algerian soup made with cracked wheat and meat.


Ingredients

  • 500g lamb or beef, cubed
  • 100g cracked wheat (frik)
  • 1 large onion, chopped
  • 2 tomatoes, diced
  • 1 carrot, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1.5 liters water
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add the cubed meat and brown on all sides.
  4. Stir in the diced tomatoes and tomato paste.
  5. Add sliced carrot, cumin, paprika, salt, and pepper.
  6. Pour in the water and bring to a boil.
  7. Reduce heat and simmer for 1 hour.
  8. Add cracked wheat and cook for an additional 20 minutes.
  9. Garnish with fresh cilantro before serving.

Notes

  • Adjust seasoning according to your taste.
  • For a vegetarian version, omit meat and use vegetable broth.
