Instructions

  1. Marinate the chicken. In a bowl, whisk together olive oil, lemon juice, rosemary, thyme, parsley, garlic, smoked paprika, salt, and pepper. Add the chicken cubes, toss to coat, and let rest for 10 minutes.
  2. Prep the veggies. While the chicken marinates, cut the peppers, onion, and tomatoes into bite‑sized pieces.
  3. Thread the skewers. Alternate chicken, pepper, onion, and tomato on each skewer. Aim for a balanced mix—about 4 chicken pieces and 4 veggies per skewer.
