Instructions

  1. In a medium bowl, whisk together the olive oil and lemon juice until well combined.
  2. Add the minced garlic, paprika, cumin, dried oregano, salt, black pepper, and turmeric to the bowl. Whisk again until all the spices are evenly distributed.
  3. If using, add the plain yogurt to the mixture and whisk until smooth and creamy.
  4. Add the chopped parsley and fresh mint to the marinade. Stir gently to combine.
  5. If using, add the honey or maple syrup and stir until fully incorporated.
  6. Place your chicken pieces (cut into 1-2 inch cubes) in a large resealable plastic bag or a shallow dish.
  7. Pour the marinade over the chicken, ensuring all pieces are well coated.
  8. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably overnight for maximum flavor infusion.
  9. When ready to grill, thread the marinated chicken onto skewers, leaving a small space between each piece.
  10. Preheat your grill to medium-high heat.
  11. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
