- 4 large russet potatoes
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- In the last 10 minutes, steam the broccoli florets until bright green.
- Once potatoes are done, cut them open and fluff the insides with a fork.
- Mix sour cream, milk, and butter in a bowl.
- Add salt, pepper, and half of the cheddar cheese to the mixture.
- Stir in the steamed broccoli.
- Fill the potatoes with the broccoli cheese mixture.
- Top with remaining cheddar cheese and bake for an additional 10 minutes until cheese melts.
