Ingredients

- 2 cups rolled oats
- 1 cup nuts (chopped)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 1/2 cup dried fruit (raisins, cranberries)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix oats, nuts, salt, and cinnamon.
- In a small saucepan, heat honey and coconut oil until melted.
- Stir in vanilla extract.
- Pour the honey mixture over the dry ingredients and mix well.
- Add dried fruit and mix again.
- Spread mixture on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through.
- Remove from oven and let cool completely before breaking into clusters.
Notes
- Store in an airtight container.
- Add chocolate chips after baking if desired.
- Adjust sweetness by varying honey or syrup.
