Ingredients

  • 1 pound beef shank
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • Salt to taste
  • Water for cooking
  • Tortillas for serving
  • Chopped cilantro for garnish
  • Diced onion for garnish

Instructions

  1. Remove stems and seeds from chiles.
  2. Soak chiles in hot water for 20 minutes.
  3. In a blender, combine soaked chiles, onion, garlic, cumin, oregano, and salt. Blend until smooth.
  4. In a large pot, add beef, bay leaves, and the blended sauce. Cover with water.
  5. Bring to a boil, then reduce heat and simmer for 2-3 hours until meat is tender.
  6. Shred the meat and serve in tortillas.
  7. Garnish with cilantro and diced onion.
