Ingredients

- 2 pounds beef chuck roast
- 1 pound beef shank
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 2 bay leaves
- Salt to taste
- Water for cooking
- Tortillas for serving
- Chopped cilantro for garnish
- Diced onion for garnish
Instructions
- Remove stems and seeds from chiles.
- Soak chiles in hot water for 20 minutes.
- In a blender, combine soaked chiles, onion, garlic, cumin, oregano, and salt. Blend until smooth.
- In a large pot, add beef, bay leaves, and the blended sauce. Cover with water.
- Bring to a boil, then reduce heat and simmer for 2-3 hours until meat is tender.
- Shred the meat and serve in tortillas.
- Garnish with cilantro and diced onion.
Notes
- Serve with lime wedges for extra flavor.
- Use leftover broth for dipping tacos.
- Try adding cheese for a richer taste.
