Description

Bienenstich is a traditional German dessert made with a sweet yeast dough, filled with creamy custard and topped with caramelized almonds.


Ingredients

  • 500g all-purpose flour
  • 200ml milk
  • 100g sugar
  • 100g butter
  • 2 eggs
  • 1 packet of dry yeast
  • 1 pinch of salt
  • 250ml heavy cream
  • 2 tablespoons cornstarch
  • 100g almonds, sliced
  • 50g honey

Instructions

  1. Warm the milk and dissolve the yeast in it.
  2. Mix flour, sugar, salt, and eggs in a bowl.
  3. Add melted butter and milk mixture to the dry ingredients.
  4. Knead the dough until smooth and let it rise for 1 hour.
  5. Prepare the filling by whipping heavy cream and mixing it with cornstarch.
  6. Once dough has risen, spread it in a baking pan and let it rest for another 30 minutes.
  7. Bake at 180°C for 25 minutes or until golden brown.
  8. While baking, caramelize almonds with honey in a pan.
  9. Let the cake cool, slice it in half, and fill with the cream mixture.
  10. Top with caramelized almonds and serve.
