Description
Bessara is a traditional Moroccan soup made from fava beans. It is hearty, nutritious, and flavorful.
Ingredients

- 1 cup dried fava beans
- 4 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Soak fava beans overnight in water.
- Drain and rinse the beans.
- In a pot, combine fava beans, water, onion, and garlic.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add cumin, paprika, salt, and pepper; stir well.
- Blend the mixture until smooth.
- Serve hot, drizzled with olive oil and garnished with parsley.

- For a creamier texture, blend longer.
