Description
Discover a quick, creamy beef stroganoff recipe easy to make. Perfect for busy weeknights and comforting family dinners.
Ingredients
Scale
- 1 lb (450 g) beef sirloin, thinly sliced into bite‑size strips
- 2 Tbsp all‑purpose flour
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 medium onion, finely diced
- 8 oz (225 g) button mushrooms, sliced
- 2 cloves garlic, minced
- ½ cup beef broth
- 1 Tbsp Dijon mustard
- 1 cup sour cream
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles, rice, or mashed potatoes, for serving
Instructions
- Prep the beef. Pat the beef strips dry with paper towels. Toss them in flour, shaking off excess. This coating helps thicken the sauce later.
- Brown the beef. Heat the olive oil in a large skillet over medium‑high heat. Add the beef in a single layer, cooking 2–3 minutes per side until browned but not fully cooked. Remove the beef and set aside.
- Sauté aromatics. In the same skillet, add butter. Once melted, add the diced onion and cook until translucent, about 3 minutes. Stir in the sliced mushrooms and cook until they release moisture and start to brown, about 5 minutes.
- Add garlic. Toss in the minced garlic, cooking for 30 seconds until fragrant.
- Deglaze and build sauce. Pour in the beef broth, scraping up any browned bits from the pan. Stir in Dijon mustard and bring to a gentle simmer.
- Finish the sauce. Reduce heat to low, then stir in the sour cream until fully incorporated. Season with salt and pepper to taste.
- Combine beef and sauce. Return the browned beef to the skillet, stirring to coat. Let everything heat through for 2–3 minutes, ensuring the beef is cooked to your preference.
- Serve. Spoon the creamy mixture over your choice of egg noodles, rice, or mashed potatoes. Sprinkle chopped parsley on top for a fresh finish.
Notes
- Use a high‑heat oil like canola or grapeseed for browning the beef.
- Don’t overcrowd the pan; brown the beef in batches if necessary.
- For a thicker sauce, whisk in an extra tablespoon of flour before adding the broth.
- Keep the heat low when adding sour cream to prevent curdling.
- Adjust seasoning after adding sour cream, as it can mellow the flavors.
