Description

Discover a quick, creamy beef stroganoff recipe easy to make. Perfect for busy weeknights and comforting family dinners.

Ingredients

Scale
  • 1 lb (450 g) beef sirloin, thinly sliced into bite‑size strips
  • 2 Tbsp all‑purpose flour
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 medium onion, finely diced
  • 8 oz (225 g) button mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup beef broth
  • 1 Tbsp Dijon mustard
  • 1 cup sour cream
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles, rice, or mashed potatoes, for serving

Instructions

  1. Prep the beef. Pat the beef strips dry with paper towels. Toss them in flour, shaking off excess. This coating helps thicken the sauce later.
  2. Brown the beef. Heat the olive oil in a large skillet over medium‑high heat. Add the beef in a single layer, cooking 2–3 minutes per side until browned but not fully cooked. Remove the beef and set aside.
  3. Sauté aromatics. In the same skillet, add butter. Once melted, add the diced onion and cook until translucent, about 3 minutes. Stir in the sliced mushrooms and cook until they release moisture and start to brown, about 5 minutes.
  4. Add garlic. Toss in the minced garlic, cooking for 30 seconds until fragrant.
  5. Deglaze and build sauce. Pour in the beef broth, scraping up any browned bits from the pan. Stir in Dijon mustard and bring to a gentle simmer.
  6. Finish the sauce. Reduce heat to low, then stir in the sour cream until fully incorporated. Season with salt and pepper to taste.
  7. Combine beef and sauce. Return the browned beef to the skillet, stirring to coat. Let everything heat through for 2–3 minutes, ensuring the beef is cooked to your preference.
  8. Serve. Spoon the creamy mixture over your choice of egg noodles, rice, or mashed potatoes. Sprinkle chopped parsley on top for a fresh finish.

Notes

  • Use a high‑heat oil like canola or grapeseed for browning the beef.
  • Don’t overcrowd the pan; brown the beef in batches if necessary.
  • For a thicker sauce, whisk in an extra tablespoon of flour before adding the broth.
  • Keep the heat low when adding sour cream to prevent curdling.
  • Adjust seasoning after adding sour cream, as it can mellow the flavors.
