Ingredients

  • 2 pounds beef cheeks
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 cups beef stock
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef cheeks with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat.
  4. Brown the beef cheeks on all sides and remove from the pot.
  5. Add onions, carrots, and garlic to the pot. Sauté until softened.
  6. Stir in the tomato paste and cook for 2 minutes.
  7. Pour in red wine and scrape the bottom of the pot to deglaze.
  8. Add beef stock and return the beef cheeks to the pot.
  9. Cover and transfer to the oven. Cook for 3 hours.
  10. Remove from oven and let rest before serving. Garnish with thyme.

  • Serve with mashed potatoes or crusty bread.
  • Can be made a day ahead for better flavor.
