Tender beef cheeks cooked in rich gravy.
Ingredients

- 2 pounds beef cheeks
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 cups beef stock
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef cheeks with salt and pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Brown the beef cheeks on all sides and remove from the pot.
- Add onions, carrots, and garlic to the pot. Sauté until softened.
- Stir in the tomato paste and cook for 2 minutes.
- Pour in red wine and scrape the bottom of the pot to deglaze.
- Add beef stock and return the beef cheeks to the pot.
- Cover and transfer to the oven. Cook for 3 hours.
- Remove from oven and let rest before serving. Garnish with thyme.
Notes
- Serve with mashed potatoes or crusty bread.
- Can be made a day ahead for better flavor.
- Adjust seasoning as needed before serving.
