Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb total)
  • 1 tbsp olive oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp sriracha or chili sauce (adjust to spice preference)
  • 1 tbsp creamy peanut butter (natural, no added sugar)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 4 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 2 cups cooked brown rice or cauliflower rice
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1 tbsp sesame seeds for garnish
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  2. Cook the vegetables: Using the same skillet, add a little more oil if needed. Add your mixed vegetables and stir-fry for 4-5 minutes until crisp-tender. If using harder vegetables like carrots, you may want to add them a minute or two earlier.
  3. Make the bang bang sauce: In a small bowl, whisk together the soy sauce, honey or maple syrup, sriracha, peanut butter, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth and well combined. If the sauce is too thick, you can add a tablespoon of warm water to reach your desired consistency.
  4. Combine everything: Return the cooked chicken to the skillet with the vegetables. Pour about half of the bang bang sauce over the chicken and vegetables, tossing to coat everything evenly.
  5. Assemble the bowls: Divide the cooked brown rice or cauliflower rice among four bowls. Top with the chicken and vegetable mixture. Drizzle with additional bang bang sauce if desired.
  6. Garnish and serve: Sprinkle with sliced green onions, chopped cilantro, and sesame seeds. Serve immediately while hot.

Notes

  • Don’t overcook the chicken: Since we’re cutting it into bite-sized pieces, it cooks quickly. Overcooking can make it tough. Cook just until no longer pink in the center.
  • Adjust the sauce: The beauty of this recipe is its versatility. If you prefer it spicier, add more sriracha. If you like it sweeter, add a bit more honey or maple syrup.
