Instructions
- Prep the pans. Preheat your oven to 350°F (175°C). Grease two 9‑inch round cake pans, line the bottoms with parchment, and lightly flour the sides.
- Mix dry ingredients. In a medium bowl whisk together flour, baking powder, baking soda, and salt. Set aside.
- Cream butter and sugar. Using a handheld mixer, beat the softened butter and granulated sugar on medium‑high for 3‑4 minutes until pale and fluffy.
- Add eggs. Add eggs one at a time, beating well after each addition. Stir in 2 tsp vanilla extract.
- Combine wet and dry. Add the flour mixture in three additions, alternating with the milk, beginning and ending with flour. Mix just until incorporated; over‑mixing will make the cake dense.
- Divide batter for colors. Split the batter evenly into three bowls. Leave one portion plain (white), tint the second with a few drops of red gel until you achieve a vibrant scarlet, and tint the third with blue gel for a deep navy.
- Bake. Pour the white batter into one pan and the red into the other (you’ll bake the blue later for a layered effect). Smooth the tops with a spatula. Bake 25‑30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool in pans 10 minutes, then turn out onto wire racks to cool completely.
- Make buttercream. In a large bowl beat ½ cup softened butter until creamy. Gradually add powdered sugar, beating on low. Increase speed and add heavy cream and 1 tsp vanilla; beat until light and fluffy, about 3‑4 minutes.
- Color the frosting. Divide the buttercream into three bowls. Add red gel to one, blue gel to another, and leave the third white. Mix each until the color is uniform.
- Assemble the cake. Place the white layer on a serving plate. Spread a thin “crumb coat” of white buttercream over the top and sides; refrigerate 15 minutes to set.
- Pipe the stars. Fill a piping bag fitted with a large star tip (Wilton #2) with the red buttercream. Pipe a ring of stars around the perimeter of the top layer. Repeat with the blue buttercream, alternating colors to create a flag‑like effect.
- Finish the sides. Using an offset spatula, apply a smooth coat of white buttercream around the sides. For extra flair, roll red and blue sprinkles in a shallow dish and gently press them onto the sides, creating a subtle stripe.
- Garnish. Top the center of the cake with fresh berries—strawberries for red, blueberries for blue—if desired. Serve immediately or chill until ready to slice.
